Veggie and egg "muffins"

Eggs are a great source of protein, and our veggie and egg "muffins" are the perfect way to grab a well-rounded breakfast on the go!

What you'll need:

  • 6 eggs
  • 2 cups chopped veggies, like spinach, tomatoes, squash, carrots
  • 1/3 cup shredded cheddar cheese

Preheat the oven to 350 degrees. Then grease a six-cup muffin tin with cooking spray. Place veggies and cheese in muffin tins. Whisk together six eggs and evenly distribute over the veggies and cheese. Bake for 20 minutes, then cool five minutes in the tray.

Give yogurt an upgrade

Turn plain, low-fat Greek yogurt into a one-cup balanced meal by adding a spoonful of nut butter, some whole-grain cereal and chopped fruit straight into the individual yogurt cup. Like a little crunch? Add chopped nuts instead of nut butter.

Easy-freeze oatmeal

With its whole-grain goodness, oatmeal is a perfect way to fuel the day. Save time by making a large batch at the beginning of the week, then freezing individual portions!

Spray a muffin tin with cooking spray, then fill each cup with cooked oatmeal, chopped fruit and nuts. Cover with plastic wrap and freeze for a minimum of four hours. Remove oatmeal from tins and store in plastic freezer bags. Reheat individual servings for one to two minutes in a microwave-safe container for a quick, nutritious meal!

Simple scrambled eggs in a mug

Teach your kids to make their own eggs—in the microwave! Coat a microwave-safe mug with cooking spray, then add two eggs and two tablespoons of low-fat milk. Whisk eggs with a fork until blended. Microwave for 45 seconds, stir, then cook for 30 more seconds.

Tip: Add scrambled eggs to leftover salsa and tortillas to create a breakfast burrito.

Wean kids off sugary cereals

They might ask for the high-sugar cereal, but it doesn't keep tummies full or bodies fueled. Get kids energized with healthier cereals by mixing the two types 50-50 to start (like flavored toasted oats with plain). Gradually change the ratio until the sugary stuff disappears!

Tip: At the store, find healthy cereals fast by spotting the ‘WIC Approved’ label on the shelf. These products are lower in sugar and provide whole grains.

No-mess pancake trick

Empty plastic ketchup containers are perfect for squeezing pancake mix! First, clean an empty ketchup bottle with hot, soapy water. Then mix up a batch of whole-wheat pancake mix and pour into the container. Your easy-to-use dispenser makes cleanup a snap!

Now that you have your handy pancake mix dispenser, make a big batch over the weekend and freeze leftover pancakes in plastic freezer bags or foil. To reheat, place in the toaster or oven.
