Egg Roll in a Bowl Recipe
Skip the takeout and make this healthy egg roll in a bowl recipe at home—ready in under 30 minutes, about the same time it takes for delivery. Made with coleslaw mix, lean ground chicken and fresh flavors, it’s one of the easiest ground chicken recipes for busy weeknights. Serve up the egg roll in a bowl on its own or over rice.

Serves 4 to 6
- 2 teaspoons olive oil
- 1 pound ground chicken
- 1 medium onion, diced
- 2 garlic cloves, minced
- 1 tablespoon fresh ginger, minced
- 1 14-ounce bag coleslaw mix (or 6 cups shredded cabbage and carrots)
- 3 tablespoons low-sodium soy sauce
- 1 tablespoon rice vinegar
- Optional: sliced green onions, chopped peanuts, hot sauce or chili garlic sauce

- Heat the oil in a wok or large sauté pan over medium heat. Once hot, add the ground chicken and cook, breaking up the chicken, until browned and cooked through, about 5 to 7 minutes.
- Add the diced onion, garlic and ginger. Sauté for another 2 to 3 minutes until the onion softens.
- Add the coleslaw mix and cook, stirring occasionally, for 4 to 5 minutes or until the cabbage is tender but not soggy.
- Add the soy sauce and rice vinegar. Mix well and cook for another 1 to 2 minutes. Taste and adjust flavors, if desired.
- Optional: Top with sliced green onions, chopped peanuts, hot sauce or chili garlic sauce for heat.
- Serve warm on its own or over brown rice, quinoa, farro or cauliflower rice.

Make your egg roll in a bowl meatless! Instead of chicken, use a 14-ounce block of firm tofu. Here’s how:
- Drain and pat the tofu dry.
- Using your hands or a fork, crumble the tofu until it resembles the texture of ground meat.
- Heat the oil in a wok or large sauté pan over medium heat. Once hot, add the crumbled tofu. Cook, stirring occasionally, until the tofu is lightly browned, about 5 to 7 minutes.
- Continue with steps 2 through 6 as written in the cooking directions.
Getting your kids involved in the kitchen
Getting kids involved in meal prep is a great way to teach them real-life skills and build their confidence and independence. Based on your child’s age and skill level, here are some ways they can help prepare the egg roll in a bowl:
