Nutritionally balanced breakfast burrito with salsa

Try our tasty breakfast burrito recipe—a kid-friendly favorite that’s great for busy, on-the-go mornings. Meal prep breakfast burritos ahead of time, freeze them and simply reheat frozen breakfast burritos while your child gets ready for the day. This breakfast burrito recipe is a simple, stress-free way to make sure your child gets the fuel they need—even on the most hectic of mornings.


Serves 4

  • 2 teaspoons olive oil
  • 1/2 medium onion, diced (about 1/2 cup)
  • 1/2 medium bell pepper, diced (about 1/2 cup)
  • 1/2 cup finely chopped broccoli
  • Pinch of salt and black pepper
  • 4 large eggs
  • 3/4 cup shredded cheese of your choice
  • 4 tablespoons salsa, divided
  • 4 10-inch whole wheat tortillas
  • Optional: 1 avocado, divided into quarters


  1. Heat olive oil in a large nonstick skillet over medium heat.
  2. Add onions, bell peppers, broccoli, salt and pepper. Sauté, stirring often, until the veggies are tender (about 5 to 7 minutes).
  3. In a medium bowl, whisk the eggs.
  4. Move the veggies to the sides of the skillet and pour the eggs into the middle. Scramble the eggs (scrape the eggs from the bottom of the skillet with a rubber spatula until they’re cooked), keeping the eggs and veggies separate while the eggs are cooking.
  5. Once the eggs are cooked, mix the veggies into the eggs and add the cheese. Turn off the heat.
  6. Warm the tortillas in the microwave for 15 to 30 seconds.
  7. Assemble the burritos by topping a warm tortilla with a quarter of the egg and veggie mixture, 1 tablespoon of salsa and 1/4 of the sliced avocado, if using, and wrapping the tortilla into a burrito. Repeat with the remaining tortillas and serve.

This filling and nutritious breakfast is freezer friendly, so meal prep them in advance (including the avocado), freeze them for up to 3 months, and reheat the frozen breakfast burritos for an easy and healthy homemade breakfast. Here’s how:

  1. Double all the ingredients and prepare the breakfast burritos according to cooking directions.
  2. Let each breakfast burrito cool before individually wrapping them in plastic wrap.
  3. Place all individually wrapped breakfast burritos in a freezer bag or container, labeled with the date.
  4. When you’re ready to serve them, unwrap one of the frozen breakfast burritos and heat it the microwave, toaster oven or air fryer.


Getting kids involved in meal prep is a great way to teach them real-life skills and build their confidence and independence. Based on your child’s age and skill level, here are some ways they can help prepare the breakfast burrito recipe:

  • Dice the bell peppers (younger kids can use a child-safe knife).
  • Tear the broccoli into small pieces before the parent or caregiver finely chops them.
  • Crack the eggs.
  • Whisk the eggs.
  • Scoop the egg mixture into the tortilla.
  • Roll up the tortilla.

Here are some other great way kids as young as 2 can help in the kitchen:

  • Ages 2 and 3: Rip lettuce, pour ingredients in a bowl, help bring empty cups and plates to and from the table
  • Ages 4 and 5: All the above + help measure ingredients, wash produce, set and clear the table
  • Ages 6 to 8: All the above + use a child-safe knife (with supervision) to cut produce, crack eggs, wipe the counters, sweep the floor, load the dishwasher 
  • Ages 9 to 12: All the above + plan a simple meal, learn knife skills, wash dishes, take out the trash
  • Ages 13 and older: All the above + plan and prepare their own meal
